Chicken Stew

Whatcha need…
Handful of shredded chicken
1 onion chopped
2 garlic cloves chopped
2 potatoes cubed
1 can black beans
1 can diced green chilies
1 Large can diced Tomatoes
2 Tablespoons tomato paste
Salt & Pepper to taste

What to do with it…
Pouch a couple chicken breasts ahead of time. I will usually do a package of four…throw em in a pot with some carrots and onions and cover with chicken stock. Bring to a boil then leave on a slow simmer for an hour. When the chicken’s done let it cool then shred the breasts and put em in some Tupperware (because you can get at least two dinners out of them). Throw your chopped onion in a pan with some extra virgin olive oil and sauté till soft. Then add garlic cook until soft. Add a handful of the shredded chicken toss. Then add the green chilies, black beans, diced tomatoes, cubed potatoes, and tomato paste. Salt and pepper to taste bring to a boil then let simmer for an hour. Perfect with Bob’s Red Mill 10 grain bread! Yum yum

This recipe can be modified with slow cooked pulled pork(see slow cooked pork) in the place of chicken…remove the potatoes and add a tablespoon of cumin-serve over rice.
