Broccoli Muffins

Another way to hide veggies…toddler tested and approved!

Whatcha need
3 cups Four
1 Tbs Cinnamon
1 tsp Baking Soda
2 cups Sugar
1 tsp Salt
1/4 tsp Baking Powder
3 Eggs
1 tsp Vanilla
2 cups very finely chopped cooked broccoli (I used frozen)
1 cup Vegetable oil

Putting it together…

Preheat oven 325
In a large bowl combine flour, sugar, cinnamon, salt, baking soda, baking powder. In a small bowl, whisk eggs, oil, vanilla. Add to the dry ingredients and mix well. Stir in broccoli. Pour batter into muffin pans. Bake 40-45 minutes. Serve warm with butter 🙂
